Whenever I feel lethargic in preparing breakfast, pancakes come to my rescue. Healthy pancakes provide me a fantastic opportunity to hide veggies that my son doesn’t like generally. I also make pancakes with the fruits of my choice. Delicious and healthy pancakes can be an ideal start to a busy day. In addition to this, they are so easy to make that we can even involve our kids in preparing their breakfast. So, whenever our little ones don’t want to eat fruits and veggies, we can make them eat everything by preparing healthy pancakes for breakfast. During the lockdown period, I used to try various easy recipes of healthy pancakes for breakfast. Here I can share with you some of those recipes for healthy pancakes to make your morning hassle-free as well as happy. At the same time, all the ingredients are healthy and available in everyone’s kitchen.
HEALTHY PANCAKES RECIPE NO. 1
HEALTHY PANCAKES WITH OATS & MIXED FRUITS:
Are pancakes healthy? To the moms who have this doubt, I can say that these healthy pancakes with banana are the perfect choice for kids. They provide carbohydrates, protein, fat, dietary fiber, potassium, iron, vitamin B6, Vitamin C, manganese and so many other nutrients. Most importantly, you can try it with different types of fruits. Above all, these healthy pancakes with banana and dates do not need sugar.
INGREDIENTS FOR HEALTHY PANCAKES WITH OATS & MIXED FRUITS ( MAKE 3 PANCAKES):
Oats – ½ cup
Banana – 1 piece
Dates – 3
Raisin – 1tbsp
Egg – 1
Vanilla essence – ½ tsp.
Cinnamon powder – ½ tsp.
Honey – 1 tbsp
Butter – to fry the pancakes
Salt – a pinch

STEPS TO MAKE HEALTHY PANCAKES WITH OATS & MIXED FRUITS:
- First, peel the banana and cut it into pieces.
2. In a blender, take ½ cup of plain oats, 1 egg, banana pieces, and dates. Blend well so that no lump remains.
3. Then pour the mixture into a bowl and add cinnamon powder, vanilla essence, and a pinch of salt. Mix everything well with a spatula. It will be of a thick batter consistency.
4. Now put a skillet or tawa on the stove and heat it on medium flame. Add some butter and let it get melted.
5. Take some amount of batter and spread it on the skillet to make a medium-sized pancake.
6. After 1-2 minutes, spread the raisins on the top of the pancake. Let it be cooked for few more minutes and then flip over. When two sides are well cooked take out the pancake on a plate.
7. Cook all the pancakes and drizzle honey over them. Serve these healthy pancakes to your little ones for breakfast.
HEALTHY PANCAKES RECIPE NO. 2
HEALTHY VEG PANCAKE:
These healthy pancakes for kids can be the ideal breakfast for the whole family. Whole wheat flour and vegetables will keep everyone full for a long time. In addition to this, you won’t have to think about its nutritional value. Carbohydrate, protein, fat, iron, dietary fiber, vitamin C – everything has contributed to make it a complete meal.
INGREDIENTS FOR EASY AND HEALTHY RECIPE OF VEG PANCAKE ( MAKE 8 PANCAKES):
Whole wheat flour – 1 cup
Semolina or suji – 2 tbsp
Curd – 3 tbsp
Carrot – 1 piece
Onion – 1 piece
Tomato – 1 piece
Coriander leaves – few sprigs
Salt – as per your taste
Water – as needed
Oil- to fry

STEPS TO MAKE HEALTHY VEG PANCAKE:
- In a bowl take whole wheat flour and semolina (suji).
2. Add the curd and water to make a batter of medium consistency. Put a lid on the mixture and keep it aside for 5 minutes.
3. In the mean time, grate the carrot.
4. Finely chop the onion, tomato, and coriander leaves.
5. Now mix all the vegetables with the flour and semolina mixture.
6. Add salt as per your taste.
7. Heat a skillet or tawa on the stove. Pour little oil on it and spread.
8. When the oil is hot take a portion of the mixture in a ladle and spread it over the tawa.
9. Cook for 2 minutes and flip the other side. Let the pancake get a golden brown tinge on both sides. It is now cooked completely. Serve it hot.
RECIPE FOR HEALTHY PANCAKES NO. 3
PANCAKE WITH VEGGIES & EGG:
These wholesome pancakes are so tasty that you can pack them in your kid’s lunchbox. To kickstart a busy day, this protein-rich pancake is my personal favorite.
INGREDIENTS TO MAKE 8 HEALTHY PANCAKES:
Whole wheat flour – 1 cup
Egg – 2
Grated carrot – 1/2 cup
Tomato – 1 piece
Onion – 1 piece
Coriander leaves – few sprigs
Bread crumbs – ¼ cup
Salt – as per taste
Water – as needed to make the batter
Oil – for frying

METHOD OF MAKING THE PANCAKES WITH VEGGIES & EGG:
- At first, take the whole wheat flour in a bowl.
- Beat the eggs in another bowl and add it with the flour.
- Pour a little water to make a thick batter. Now add salt as per your taste.
- Finely chop the onion, tomato, and coriander leaves.
- Take ½ cup of grated carrot. Mix everything well.
6. Heat about ½ tsp oil on a skillet.
7. Take some batter and spread it like a medium-sized pancake.
8. After cooking for 1 minute sprinkle some bread crumbs on the pancake. Wait for another 2 minutes and then flip it over. Cook well so that the two sides become slightly golden brown.
9. Finally, your pancake is ready to serve. You can serve it with tomato sauce or green chutney.
However, there are so many healthy and easy recipes to treat your young ones. In fact, some of them are so delicious that kids won’t understand that they are actually eating the vegetables they don’t like. Most importantly, if your child is a picky eater, you can boost up his iron level by incorporating different fruits and veggies in his pancakes. Besides, it would boost up his immunity system before going to school again.
